There are several ways to make green pasta dough: You can use the chlorophyll from parsley, basil or spinach. You will also find that there are colour powders available. The first time I tried dyeing the dough with spinach, the colour was not very convincing and there were pieces of spinach still visible in the dough and later the pasta.
But then my co-workers and I saw a some luscious green lasagne sheets in a magazine and we could not believe that it was possible with natural colouring. So one of my co-workers wrote to the magazine and asked them how they did it and they said parsley.
I tried it later and you can see the result in the title image above.
