This is the first recipe I developed for croxetti pasta. I came up with the rough idea while making pink croxetti and later chocolate croxetti. I thought that a green pesto would suit the pink croxetti colourwise and the chocolate croxetti tastewise. Of course, you can use it for other pasta forms as well.
You might want to start with peeling the pistachios to see how many are of a nice green colour and weigh only those.
